Charred Corn Pico de Gallo and Guacamole Recipes

Charred Corn Pico de Gallo
Ingredients
1 ear of corn
1 red onion
2-3 tomatoes
Pickled jalapeños
Coriander
Juice of 1 lime
Olive oil
Recipe
1. Brush the corn with butter, season and char on the barbecue
2. Cut the kernels off the corn, finely chop the red onion and add to the corn
3. Chop the tomatoes, jalapeños and coriander and add them to the mixture
4. Add the lime juice and a glug of olive oil, season to taste

Guacamole
Ingredients
2 ripe avocados
1 white onion
Sweet chilli sauce
Pickled jalapeños
Coriander
Juice of 1 lime
Tajín seasoning
Optional:
Lime zest
Chilli flakes
Recipe
1. Scoop the avocados into a bowl in teaspoon-sized chunks
2. Finely chop the white onion and add it to the avocado
3. Add sweet chilli sauce to taste, finely chop the jalapeños and coriander and add to the mixture
4. Add the lime juice and a sprinkling of Tajín seasoning
5. If you don't have Tajín, or you can add this as well as depending on your tastes, add the zest of the lime as well as the juice, and some chilli flakes
6. Add salt and pepper to taste
