Sara's Cornbread Recipe

Cornbread is an American favourite and I was always intrigued to try it. So, one day my friends planned a themed party and my given cuisine was American. This was the ideal opportunity to try the Cornbread recipe and get my friends opinions. They loved it and so did I! So here is my take on Cornbread;

Ingredients

  • 85g of all-purpose flour
  • 65g of yellow cornmeal
  • 45g of granulated sugar
  • 1tbsp baking powder
  • 1/2 tsp salt
  • 2 tbsp vegetable oil
  • 1 egg
  • 70ml of milk
  • 2 tbsp granulated sugar

Method

Step 1

In to a large mixing bowl add, flour, yellow cornmeal, sugar (not the 2 tbsp), baking powder and salt. Mix together well.

Step 2

Add the vegetable oil to the mixture and mix until it is smooth and the lumps are gone. Please note, this should still be dry.

Step 3

Mix the milk and egg together and then pour into the dry mixture. Mix as well as you can, there may be lumps still but try to get them out as much as you can. Let the mixture rest for 5 mins.

Step 4

Grease your muffin tins or cornbread pan. Then with the 2 tbsp of sugar sprinkle over the pan/tin giving a nice thin coating, add more if needs be.

Step 5

Add the mixture into the pan/tin but only fill half way and sprinkle some more sugar on the top.

Step 6

Add to a preheated oven 400f / 200c / gas mark 6 for 20 mins or golden brown. Keep an eye to make sure the sugar doesn't burn.
